Comments for Last Day of November

Last Day of November: 11/30/05

November is drawing to a close. We're having rain. We had to pull Sean's yellow jacket out of storage and he's thrilled to see it again.

Winter Stew:

Last night I made our first stew of the impending winter. Here's the recipe:

Few tablespoons of olive oil
1/2 pound cubed beef (browned)
5 cloves of garlic (diced)
2 leeks (diced)
1 cup sliced mushrooms
1 1/2 cups carrots (sliced)
1 16 oz can of butter beans
2 potatoes (sliced)
3/4 head of cabbage (shredded)
1/2 bunch of spinach
1 16 oz can of tomato paste
1 can of cream of tomato soup
1/4 cup red wine
2 cups water

Brown the beef, garlic and leeks in the olive oil at the bottom of the stew pot. Then start adding the other vegetables and the liquid. Put the spinach leaves on top and don't mix them in to the stew. Cover and cook on a medium heat for about 1 hour.
