Leeks are my favorite vegetable to cook with. Whenever I do the grocery shopping I make sure to pick up some. They cook up like onions but they're sweeter.

Last week while cooking the roast beef I also needed to cook up a vegetable side dish. We were between shopping runs so all we had were some leeks, a zucchini and a can of white beans. A little white wine, some oyster sauce and fresh herbs turned an odd bunch of ingredients into a delicious side dish.

Sean ate the zucchini although he wasn't thrilled by it. Harriet loved it all, although after a while she got bored with the beans. I was happy with the leeks hiding the taste of the zucchini. It was a nice compromise of tastes.

Mmm, that sounds good. I love all three of those things, though my stomach would want me to use far fewer leeks than it looks like you used. I love onions but can only eat them in small quantities without having problems. "
